Spinach Pecan Yogurt Dip-दही पालक की चटनी

Healthy home made alternative to high calorie readymade dips
Gluten Free, quick to make and nutritious 
Ingredients:
500 grams greek yogurt
10 nuggets of frozen spinach or 200 grams of fresh baby spinach
1 teaspoon salt
1 tea spoon of oil ( for sautéing spinach)
1 tablespoon of olive oil (optional)
30 grams of crushed pecans
1 tablespoon of seasoning of your choice
2 inch frozen crushed green chilli (optional)
2 cloves of crushed garlic fresh or frozen
Preparation:
If you do not use greek yogurt, you will need to extract water from regular yogurt.For this put yogurt in a muslin cloth and hang it for 1-2 hours for the water to drain out.
STEPS:
Step 1. If frozen, thaw and cook spinach in microwave for 3-4 minutes and remove all water. Sauté spinach and garlic in  a pan.
Step 2. Add salt, sautéed spinach, seasoning, frozen crushed green chilli and pecans to greek yogurt or block of yogurt drained in muslin cloth.
Step 3. Mix everything thoroughly and add olive oil (optional).

1. Spinach yogurt dip can be served cold or warm (serve as you make it warm sautéed spinach or heat up in Microwave for 30 seconds) to go with baked naan bread, corn wafers,  crackers or thin savoury biscuits.
2. You can be as creative as you want to be , add spring onion or other herbs like dill weed, rosemary, basil, mint, coriander or spices like red chilli pepper, black pepper.
2. You can also add finely chopped bell peppers, mushrooms or cucumber.

Roasted Garlic-भुनी लहसुन

As healthy as garlic is, it adds a distinct flavour to our foods. This stinking rose, if roasted does wonders and turns an ordinary recipe into a gourmet meal. Check out the steps below for a quick way to always have roasted garlic ready with you to add to any recipe.
STEPS:
Step 1. Cut the garlic bulb into half horizontally.
Step 2. Wrap the halves of bulbs in silver foil and throw it in the oven when the oven is already in use for something else. Roast for 15-20 minutes.
Step 3. When the foil cools down, open the foil and hold the half cut bulb in the foil and press it to squeeze roasted garlic out of it. It will smoothly come out completely mess free leaving the shell of the cloves within the foil.
Step 4. Store roasted cloves in an airtight container in the fridge. These can be stored for months without it going bad.
Handy Tip:
Add mashed roasted garlic to yogurt dips, hummus or any other recipe that requires garlic as an ingredient.

Time is Precious-एक सलाह काम की

Time is precious, value your time. When in the kitchen preparing a meal, use the same time to do other preparatory things for future use while your food is on the stove getting tender. For example, as I mentioned in a previous post, you could peel and grind ginger and garlic to freeze for future use. Or you could prepare a broth or sauté chopped onions for the next day (as I will explain in an upcoming post). This will save cooking time for your next meal and you get some more time each day to spend with your loved ones!

Chop and Freeze-एक सलाह दिल से


When you have some free time, peel and chop ginger, garlic and green chillies in a chopper and freeze them in a thin layer in separate freezer bags. Once frozen, break the layer with loose hands to pieces of different sizes. You can throw in a piece of the required ingredient as needed for any recipe while cooking.This will cut short the cooking time substantially. Now spend this saved time with your family or doing what you like to do the most.
